Back on the bandwagon

Last week was terrible, and I'm still feeling the effects of my injury, however, I stopped taking any form of pain medication (be it Aleve or Advil) and have been working out daily since Monday. My goal is to get myself back in gear by continuing my T-Tapp exercises at least 5-6 days a week and then add another different workout to my program when my injury completely heals.

On top of this we have stopped with our poor eating habits and have been eating homecooked meals. Tomorrow is grocery shopping day and I am trying to focus on the types of food that are healthy as well as tasty. I'm a huge fan of bell peppers and they say the more color in your diet the better it is for you. The only problem is I sometimes end up with a hive-like condition anytime I eat orange bell peppers, but I can't stay away from them! I have a terrible sweet tooth and will try to pacify that with more clementines (as long as they are still in season) and because my husband was buying ice cream for the past week, I am going to try those Healthy Choice Fudge Bars or whatever they are so everyone has a satisfied sweet tooth. Time to crack the whip! And I will tell you one thing that is off our list this month- string cheese- or I will have to hide it, because my daughter went through the string cheese like crazy. Another thing I will be buying for afterschool snacks for her and myself are breaded chicken breast nuggets from Costco. We'll see how good those are. I love Costco!

I've never stuck with a workout program as long as I have with the T-Tapp. Getting my eating under control takes discipline but it's easier to do than exercising on a regular basis, so I'm pretty proud of myself for sticking with it.

Recipe Review: Enchilada Stacks (What Did You Eat)

The lovely Sher of What Did You Eat recently posted about having trouble with stacking her enchiladas and when I saw the pictures of what I thought looked awesomely stacked, I knew I had to try this recipe out. It's a very easy recipe to make, but in the end I ended up with too much cilantro and not enough green onions for my own tastes. I'm also not a fan of salsa, but I went with it anyhow, and despite my cilantro flub up (hey I was pulling a Rachael Ray and "eyeballing it" instead of measuring- that is SO not a good idea for me!), my husband loved this dish. I am pleased. I couldn't get my kid to try it for the world, but that's normal. She ended up with a PB&J sandwich. I normally do not cater to her whining or pickiness, but 1, it was getting late, and 2, I figured "pick and choose your battles". *Sigh*

I also ended up with a problem- I didn't grease my pan like I should have before baking it. So guess what happened? My enchilada stacks tore! Ack! It was still good anyhow! Here are some pictures of the stacks I made:




Enchilada Stacks

2-3 cups salsa, store bought or homemade
corn tortillas, the amount depends on how many stacks you will make and the number of layers
2 cups refried beans
2 cups shredded Monterey Jack cheese
1 cup thinly sliced green onions
1/2 cup chopped cilantro
oil

Preheat oven to 350 degrees F. Spread a litt;e salsa in the bottom of a baking dish.

Put about 1 cup of the salsa in a small skillet and heat until hot. Heat several tablespoons oil in a skillet. When it's hot, dip a tortilla in the oil for about 20 seconds and then dip it in the salsa. Or you can skip the oil part and just dip it in the salsa in the skillet. Place the tortilla in the baking dish and top with a layer of black beans, cheese and salsa. Add another tortilla that has been dipped in oil and salsa on top of the black beans and top it with cheese, green onions and salsa. Then add another tortilla on top of that. You can then keep adding layers. I added another layer of cheese and green onions. When you're done layering, add some cheese and salsa on top of the stacks and bake in the oven for 20 minutes.

What's on your menu tonight?

I will be making Sher of What Did You Eat's Enchilada Stacks tonight. It seems easy and looks absolutely delicious.

Also, Kristen at Dine and Dish told me about a Monday Menu challenge of some sort that she does. I have to say that after a laid-back weekend, this is exactly what I need to get myself back in gear, and I am thinking of doing a Monday Menu every Sunday from here on out. Only thing is, come March 6th, my daughter will be taking dance classes that run late, so you know what that means- Monday nights I need to make double portions so we can have leftovers on Tuesdays. In any case I need a serious case of organization because between finishing school and this injury last week, I have been slacking off!

Let the re-organization begin! (And any tips you have, I am all ears (eyes?) so don't be shy!)

I love breakfast

Yesterday my husband and I decided to go out for breakfast, and all week I have been extremely sore due to the fact that I pulled some muscles (may even be pinched nerves) in my sciatic area. Not fun!!! I have been taking Ibuprofen as well as using Icy Hot at night. So anyhow, he took us out and we ended up at IHOP, I haven't been to an IHOP since 1992. I settled on a skillet type of plate and we ordered their Chocolate Chip pancakes to try out. I couldn't eat more than two bites of it because it was like eating cake! Very rich! In any case, I thought it was pretty good overall, the skillet plate was delicious (country fried red potatoes with onions, green peppers and mushrooms with cheese on top and two eggs done overeasy).

I love eating breakfast, especially if it has to do with eggs and sausage/bacon and hash browns. I'm not too much of a fan of pancakes, but french toast? I love it. I was considering getting their Stuffed French Toast plate but decided against it because I made that Stuffed French Toast with ricotta a while ago and it was too rich for my tastes (good but very very rich). I'm not too big of a cereal person but if it's eggs, I love it.

Funny how I am finding certain foods are too rich for me nowadays, such as cheeses, even the most mild cheeses (including cream or ricotta) are too rich for me at times. I wonder why that is?

Diabetic-Friendly Recipe: "Fried" brown rice

For my aunties and my mama! Found a recipe for a more healthy version of fried rice. I am kind of skiddish about cooking brown rice (even though I have a rice cooker) because last time I tried it didn't turn out well.

Enjoy and let me know if you try this! (Nutrition facts and diabetic exchange facts are below the recipe!)

"Fried" brown rice

Ingredients:

Cooking spray
2 teaspoons reduced-calorie margarine
1/4 cup liquid egg substitute
1 chopped green onion
1 1/2 cups instant brown rice
1 1/2 cups 50% less sodium, fat-free chicken broth
1/2 cup frozen peas and carrots, unthawed (alternatively, unthawed frozen mixed vegetables can be used)

Instructions:

Coat a large, nonstick skillet with cooking spray; add margarine, and melt over medium heat. Add egg substitute and stir-fry until egg is set (like scrambled egg). Stir in onion, rice, broth, and peas and carrots; stir to mix. Bring mixture to a boil over high heat, cover, reduce heat to medium-low, and simmer for 5 minutes. Remove from the heat, stir, and cover. Let stand 7 minutes, fluff with a fork, and serve.

Cooking time: approximately 10 minutes
Standing time: 7 minutes

Preparation time: 5 minutes

Yield: 3 1/2 cups
Serving size: 1/2 cup

Carbohydrate: 16 g
Protein: 4 g
Fat: 2 g
Saturated fat: <1>

Silicone bakeware

I ordered some silicone bakeware back in October of last year and I honestly am not a fan of it. I've used what I have a few times and each time it would bake the cake nicely, but my problem was getting it out of the bakeware itself. I've tried spraying it with the Pam with Flour spray to leaving it alone (since it's supposed to slide right out). Everytime, the top of the cake would split in two, half of the cake on my serving platter and the other half still stuck in the silicone bakeware.

I have exhausted all other means of trying to get my cakes out perfectly from the silicone bakeware I received. My question is, if you own silicone bakeware, do you have the same problems? Could it be the brand of silicone bakeware I have? (I ordered this from Collections Etc. in October, it's a holiday silicone bakeware set.) What kinds of things do you do to ensure you cake comes out perfectly?

Review: Nana's Spaghetti Sauce (Mommy Chef)


This is the best damn sauce I have had in a LONG time. I don't even remember my mom or dad making homemade spaghetti sauce to tell the truth, but this?? Oh man. And we have leftovers so I am one happy gal.

This recipe is one that Mommy Chef inherited from her Nana (hey, another Nana! Cool!) and lemme tell you, it's comforting, it's delish, and it has so many flavors that come right at you. I made so much, that I couldn't fit all of it into my pot, LOL! So I have some reserve leftover meat w/o sauce that we will be using for sandwiches later.

I definitely will be using this recipe from now on. Goodbye to canned sauce! Thanks, Mommy Chef! If you want to try it, check it out in the link above, I highly recommend it!

Another MeMe- Five things about me

I was tagged by Garrett of Vanilla Garlic (who is making some delicious and savory looking cupcakes these days! YUM!) to do this little MeMe about well...me! I think I'll do this MeMe based on food memories this time around! Let's see here...

1. I was a picky eater as a child, which is why my dad likes to laugh at me when I'm having trouble trying to get my daughter to eat her vegetables and foods she is not used to. I remember specifically one time at my Grandpa's house (my father's side of the family) how we were forced to eat brussel sprouts (*gag*), so my cousin and I put them in our paper napkin and put that in our pockets, went on the side of Grandpa's house and dumped them there. Of course, they matched the grass so no one found them. Or did they?? I have to wonder about that! Of course, nothing was ever said to us.

2. As a young child I grew up in my Nana's kitchen (this is my mother's side), and I must have been about oh, 4 or 5 years old, and my uncle told me that pork fat was good for me, so it wasn't until my parents saw me eating the pork fat that they put an end to it. As Emeril says, PORK FAT RULES! (Well, it really does only if it's fried and crispy!)

3. My dad and I once baked a marble cake for my mom's birthday (back when they used to have the marble cake mixes in the boxes, like Duncan Hines- remember that? I never see them anymore!). We decided to let it cool overnight and left it on top of the dishwasher on racks. The next morning my then 2 year-old sister went into my parents room and was saying, "This good. This yummy", all the while stuffing her face with the cake we made. I threw a fit (being a 10 year-old) and started crying over her eating the cake. My mom and dad just laughed and dad ended up going back to the store for another mix and made sure we put it far out of my sister's reach.

4. When we were moving to Washington State from California back in May 2003, I had a friend coming by to pick up some old clothes of my daughter's for her children. My mom was there waiting for her and accidentally gave her my brand-new crockpot that my husband scrimped and saved up to get for me that previous Christmas. He was mad and told me he would never buy me another crockpot, but I ended up getting one from his grandmother when we moved up here anyhow. As for the crockpot, I tried to retrieve it from that friend, who sold it to make money off of it (even after the fact that she knew I wanted it back- we are no longer friends suffice it to say!).

5. I want to leave with possibly one of the most touching memories I have in my lifetime. When my daughter and I moved back to Washington State after staying with my father in California, in 2004, my husband was laid off from the job as conditions became icy and there was little to no work. We both were actively seeking work and trying to make ends meet and well, as luck would have it, our cupboards and fridge were starting to look barren, so we swallowed our pride and went to the local food bank. We were greeted by understanding, caring and sympathetic people who offered my daughter a breakfast cereal bar and even had given each family a dessert as a treat. I will never forget their hospitality or how they made me feel like it was okay to swallow my pride and get the help I needed. We only went there twice, but those two times I will never forget and will always hold them dear to my heart.

Soup's On

My husband is sick and my daughter is fighting off a cold/flu. My sinuses are still clogged despite doing everything I could to drain them (thanks Sinu-Cleanse, a tip given to me by the lovely Vinegar Martinis!).

I am going to just cook up a pot of soup. Instead of buying canned soups (full of preservatives and sodium, mind you!), I am going to take chicken broth and throw in some chopped up veggies (celery, carrots, onion, garlic) and add some leftover chicken breast I have to it. I really wanted to make Mommy Chef's Spaghetti Sauce (I have a hankerin' for that!), but even I feel too weak to get to the grocery store. I am going to try to make it tomorrow or Monday. I can't wait, I am craving some spaghetti!

Red Alert! I have fallen off the bandwagon

We have been eating out, almost ALL week long. Not all fast food but deli food, fried chicken, and man my stomach is feeling it. I have not been in the mood to cook or clean and both my gut and my house are showing it well. My mind has been on other things (obtaining my Associate's degree, my mom flying to visit me in April (YAY!), my daughter's extra-curricular activities that begin shortly (besides what she is doing now), and other things) but I know that is no excuse.

The one thing I have not fallen off of is the exercise bandwagon. Still exercising six days a week. I was trying to aim for seven days, but it just doesn't work that way, especially because Sundays are the worst for me (always busy on Sundays). I guess part of me is scared that if I fall off the exercise bandwagon I won't get back on it, and I have to keep myself as disciplined as possible to continue doing what will only benefit my body and my health. Now to get back to eating healthy again! *Sigh*. It's so easy to fall behind, especially when life picks up, gets busy and there are holidays like Valentine's Day to smack you in the face (with chocolate or cake, of course).

My goal for next week: Cook all meals and get back on track! This has gotten far out of control and I need to stop it before it consumes me!

Valentine's Day loot

The teacher in my daughter's class allowed the children to exchange Valentine's at the end of the day, and I thought that was particularly very smart. My daughter was a hyper mess at the end of the day and when we got home and went through her bag of Valentine's we found a lot of candy and at least 4 packages of Fun Dip.


Fun Dip. Who remembers that stuff?? It's that weird sugary stuff that is colored and you dip a stick of candy into it. No wonder why first graders are so hyper! Now I have got to do some major damage control and really make sure that this stuff is not eaten in the matter of a week or even two weeks.

Suffice it to say that I am no fan of Fun Dip, but hey...if she gets it once or twice a year I won't really have a problem with that. It could be worse! I'll just make sure she brushes her teeth really good after eating it.

As a child I had my favorite types of candies on Valentine's Day and they were those Conversation Hearts. I can't seem to find them anywhere anymore, everything is all chocolate and other goodies. There was one conversation heart (I believe it was the white colored ones) that tasted like Pepto Bismal- oddly enough that was my favorite flavor.

Anyone else dealing with a sugar hangover from yesterday?

Valentine's Day

is really not a big holiday we celebrate. It just seems to be more of a consumerist type of holiday than anything, so I usually cook us a nice meal and we have a candlelit dinner together. We'll be doing this tonight except this year I'm going all out and we're going to have something already cooked from the deli at the grocery store! Huzzah!!!

If I remember to take pictures later I will post.

I got 6 inches of my hair lopped off today and I feel light as a bird. If I had more time I'd probably throw in a manicure too, but I figured today I would do something nice for me and at the same time look good for my man tonight at our late (post-midnight, since he has to work) dinner together.

Diabetic-Friendly Recipe: Bow ties w/Chicken & Mushroom Sauce

I've actually made something similar except with Penne or Rigatoni in the past. It's quite delicious! I think I will try it with bow ties next time!

Recipe

2 cups (about 5 ounces) uncooked bow tie pasta

1 can (10 3/4 ounces) reduced-fat, reduced-sodium cream of mushroom soup (such as Campbell’s Healthy Request)

3/4 cup skim milk

1 can (4 ounces) sliced mushrooms, drained

1/8 teaspoon black pepper

1/8 teaspoon garlic powder

1 can (5 ounces) chunk white chicken, drained and flaked

Dash cayenne pepper

Bring a saucepan of water to a boil, add pasta, and cook al dente, about 9–11 minutes. Meanwhile, in a separate pan, stir together soup, milk, mushrooms, black pepper, garlic powder, chicken, and cayenne pepper. Bring to a simmer over medium-low heat and heat through. Pour sauce over drained pasta and toss to coat.

Preparation time: 25 minutes

Yield: 4 1/2 cups
Serving size: 1 cup

Protein: 9 g
Fat: 3 g
Saturated fat: 1 g

Restaurant Review- Black Forest, Everson, WA

I received a couple of emails from locals here asking for some advice on where to eat, and I have to be honest, I haven't really ventured out that far yet, so my husband and I are going to go around Whatcom County and possibly even further south as far as Everett, Washington to review certain restaurants. The funniest and most ironic thing about this is when I was working as a telemarketer, I used to call up people surveying them on where they liked to eat. Now, I can't really recall what people said unless I hear of the place.

So we decided to drive northeast to Everson, which is a bit of a drive (over a half hour drive) because I have been dying to go to Black Forest, which is a German restaurant that serves Schnitzel (which everyone I have ever talked to who has been there raves about). Schnitzel is a breaded pork cutlet type of meat. Anyhow, we drove to Everson and found Black Forest easily (it's on the main street in Everson, which is a small town). I will say it is definitely colder in Everson than where I live (same county but I hear the further east you go, the colder it gets!).

It took us forever to figure out what we were going to order. My husband settled on a Schnitzel plate that came with prawns, I finally decided on the Schnitzel Combo, which came with Schnitzel and Bratwurst. Unfortunately they did not have a kid's menu (besides my daughter I saw no children in there) so we ordered from the "Bar menu" (they have a bar in their restaurant) and she wanted to try the Schnitzel as well. I had a hard time deciding because our table gave us a view of the cooks grilling up steaks that looked delicious, but I really wanted to try this Schnitzel.

My starter was a Goulash, which was a hearty stew with good-sized chunks of tenderloin accompanied by potatoes, carrots, celery and onion. There's some spices in the background that I could not put my finger on, but it was delicious! (I apologize for the darkness of the pictures, the seating is very intimate there and I did not want my flash going off in the restaurant.)


After finishing my Goulash and the garlic Texas toast that came along with it, we received our entress. The Bratwurst was nice and juicy and quite possibly the best I have ever had. The Schnitzel was delicious, but I was digging my daughter's plate, which had a nice sauce with mushrooms on top of the Schnitzel. Our plates came with red cabbage, fried potatoes as well as fresh steamed green beans (which I never had before and I LOVED). While we were eating, one of the chefs (or possibly the owner? I am not sure) came out to greet everyone and asked us how we liked it, I told him it was fantastic and he asked us to come again. We definitely will!


The only thing I would recommend is maybe a child-friendly menu, however, if they don't have children coming in often, I could understand why.

Top Five Foodie Movies

I got to thinking the other night about movies involving food, and decided to compile a list of my top five favorite foodie movies.

1. Babycakes - an obscure made-for-TV movie starring Ricki Lake as a single, overweight woman trying to win the man of her dreams, namely through food ("food is a way to a man's heart" or something like that?). Cute movie but depressing at times.

2. Like Water for Chocolate - based on a book (which I read in high school and loved), is about a young girl, Tita, who cannot marry because it is tradition for the oldest girl in the family to take care of her mother. Tita creates dishes that have a bit of magic to them and sometimes cause an uproar. I loved this book and the movie equally. I think this may be the only movie adaptation from a book that I really truly loved.

3. What's Cooking? - this movie is about a group of different people (different cultures) getting together at Thanksgiving. I loved this one, there is an air of drama but you also get to see dishes being prepared as well.

4. Soul Food - the trials and tribulations of a family going through changing times, and of course, soul food! What I loved the most was the women with their mother, showing the process of making the soul food. In a sense it reminds me of my Nana and when I used to watch her cook food in the kitchen.

5. The Joy Luck Club - While food may not be a huge part of this movie, it does have a part in it. This movie is about a group of Chinese-American women and their relationships with their mothers (their mother's history is focused on throughout this movie). This one is a REAL tear-jerker. I hadn't watched it in years until maybe six months ago and I was bawling my eyes out, thinking of my own mother, who I miss dearly (who lives 1,000 miles south of me!).

Top Five Guilty Food Favorites

Garrett from Vanilla Garlic wrote about our guilty pleasures food-wise and compiled a list of his top five favorites, so I thought I'd do the same thing myself!

1. Cake. Any type of cake with lots of sweet frosting. I'm such a cakehound.

2. Nachos, covered in cheese, green onions, meat, sour cream, beans, tomatoes, you name it. I prefer my nachos to be a little soft with their crunch!

3. Steak. I love steak. I don't eat it often but when I do, I love it. My favorite cut of beef is Prime Rib, served with Au Jus sauce. I love Filet Mignon and Porterhouses as well.

4. Corn. It's such a bad bad bad starchy food but I can never get enough of it. I stopped slathering it in butter and it's still just as good. I do prefer it on the cob though, and Sweet White Corn on the cob would be my favorite.

5. Sonic and Wendy's food. I never had Sonic til the summer of 2005 and I LOVED their tater tots ("Give me some of your tots!"). I love Wendy's french fries and Frosties (and yes, I'm one of those weirdos who dip their fries in their frosties).

So say you, what are your favorite guilty foods? I won't tag anyone this time around but leave it open to those who would like to share their indulgences!

Dog owners! Dog Treat Recipes

I got this from a friend recently, and wanted to share with you all! You too, can stop buying the expensive dog treats and make them yourself!

(Can't remember what they're called)

3/4 Wheat Germ
3/4 Powdered Milk
1 jar beef or liver flavored baby food
1 egg
1/2 jar of water (from the baby food)

Combine all ingredients and mix well. Put on greased cookie sheet in quarter - size increments. Bake at 350 degrees for about 15 to 20 minutes.

Next Recipe (I think these are called Gobble Ups)

Bacon
Cheese
Canned Biscuit Dough

Cook bacon and let cool. (Save grease if you fry the bacon for an optional step.) Flatten the biscuits on to a greased cookie sheet. Crumble bacon and cheese on the top of the flattened biscuit and then roll/fold the biscuit w/ cheese and bacon inside. Bake at 350 until the tops are golden brown. (Before baking you can brush the outer parts of biscuit w/ the grease if you want.)

Hey, even us humans could eat them. May not like them but we could eat them for sure.

Spam Sushi

This may gross out most of you, but there is such a thing as Spam Sushi. Hard to believe, huh? I guess they will come up with anything. I have to say, and I know some other Filipino people can vouch for this one, I love fried spam with sticky rice, so I am wondering if this Spam Sushi is something I could try out. My mom went to the Spam Festival in Monterey a couple of years ago and wasn't really keen on the Spam Sushi so she did not try it. I thought I'd look up a recipe, and sure enough, I found one on Epicurious.

SPAM SUSHI (HAND ROLL)

Ingredients:

Spam strips, cooked Sato-Shayu style
Sushi rice
Nori (seaweed used to roll sushi)
Cucumber sticks
Radish sprouts
Takuwan strips (Japanese pickled radish)
Wasabi (Japanese horseradish)

Preparation:

SUSHI RICE:
Wash and cook 3 cups Calrose rice. While still hot, season with Vinegar Sauce, or use packaged sushi mix such as Sushi!-No-Ko.

VINEGAR SAUCE:
1/2 cup Japanese rice vinegar
1/2 cup sugar
1 teaspoon salt

Cook until sugar dissolves. Cool. Sprinkle half of vinegar sauce over hot rice; mix gently. Add more vinegar sauce to taste. Or follow instuctions onpackage mix.

SATO-SHOYU STYLE:
Spam sliced or cubed.

SAUCE:
1/4 cup shoyu
1/4 cup sugar
1/4 cup mirin (Japanese sweet rice wine)

Bring sauce to a boil in a small pan. Add Spam, lower heat, and cook 2-3 minutes.

TO ASSEMBLE SUSHI:
Cut a sheet of nori in half. Place nori on your left hand; add a small amount of rice. Add Spam and all or some of the other ingredients. Wrap nori around the filling and toll from left to right.



NOTE from me: Because I am not familiar with sushi, I am curious- what exactly is Sato-Shayu style? I am assuming it's a certain way something is cut, obviously...but I guess I'll be looking that one up as well. I doubt I'll ever go out of my way to try this, but if I ever get a chance to try it somewhere, I sure will.

Pasta Bruschetta Review


Okay, so I didn't have Basil or Parmesan. I substituted Oregano. WRONG idea. We really didn't care for this but it's because 1, I didn't have the correct ingredients, 2, I accidentally added TOO much Oregano, and 3, I should have cooked the onion/tomatoes before adding them because I can't stand the taste of raw onions.

I'm sorry

This has truly been the week from hizzell. I am planning on making Mommy Chef's Pasta Bruschetta tonight, except I totally forgot the Basil Leaves and the Parmesan, so I will have to substitute mozarrella. As for the Basil, no can do. Oyy.

Pictures will follow, I promise. Pork chops will be our meat tonight as well!
